The best recipe for a hungry stomach: try Asian Chicken Schnitzel with Broccoli!

This recipe is just what you need on warm summer days. It’s light, balanced and really tasty. And it also looks really nice and is guaranteed to taste good for the whole family. Read on and be amazed at how it works!

Ingredients for 4 servings:

  • 400 g of broccoli (or broccoli florets)
  • 1 red chili pepper
  • 1 clove of garlic
  • 1 piece of ginger (about 3 cm)
  • 2 tablespoons of cashew nuts
  • 50 g of cashew nuts
  • 75 g Panko (Japanese bread crumbs)
  • 2 eggs
  • salt and pepper
  • 2 large chicken breast fillets (about 250 g each)
  • 200 g of basmati rice
  • 5 spoons of oil
  • 75 ml of soy sauce
  • 2 sprigs of mint
  • 1 tablespoon of agave syrup

Approximately per serving:

  • 665 calories
  • 25 grams of fat
  • 60 grams of carbohydrates
  • 45 grams of protein

And this is how it is done:

  1. First, wash and cut the broccoli. Clean the chili pepper, seeds, wash and cut into thin strips. Peel the garlic and ginger, chop them finely. Chop approximately 2 tablespoons of cashew nuts.
  2. Finely chop 50 g of cashew nuts, mix with panko. Beat the eggs with salt and pepper. Pat the chicken fillets dry and cut each one in half horizontally.
  3. Cook rice according to package directions in boiling salted water. Dip the chicken schnitzel first in the egg, then in the crumb mixture. Roast the chopped cashew nuts in a hot pan, remove. Heat 3 tablespoons of oil in a pan. Fry the schnitzel in it for about five minutes on each side.
  4. Heat 2 tablespoons of oil in a large pan. Fry the broccoli in it for about five minutes. Fry the garlic, ginger and chilli for a while. Coat with soy sauce and 75 ml of water and boil for about four minutes.
  5. Wash the mint and cut into strips. Drain the rice. Stir the syrup into the broccoli. Cut the schnitzel into slices. Serve with broccoli and rice. Sprinkle with roasted cashews and mint. Finished!
