Asian Pho Chicken Soup Recipe NDR.de – Guide

Ingredients for the soup:

For a spicy pho-style soup, you need a strong broth as a base. In Vietnam, it is traditionally made from beef and beef bones. The base of the Eat Better variant is chicken stock. It is worth preparing them in larger portions and freezing them for future use.

The broth is prepared as follows: wash the chicken inside and out, put it in a pot and cover it with cold water. Let it boil. Wash and roughly chop the vegetables and mushrooms. Dice the garlic and ginger. Add to the chicken along with the remaining herbs and spices. Add some salt. Once it boils, cook with the lid half closed on low heat for about 1.5 hours. Remove the growing turbidity if necessary.

Then carefully remove the chicken from the pot. Remove the meat from the bones and set aside for later use. Pour the liquid into a fine sieve and collect the vegetables. Drain the liquid through a clean kitchen towel. This makes the soup particularly thin and clear. Adjust them with a little salt and pepper.

Ingredients for soup:

Clean the vegetables and onions and cut them into long strips. Remove the stems from the shiitake mushrooms and tear the caps into pieces. Heat the oil in a pot and sauté the onions and vegetables that require longer cooking (parsley, carrots). Fill with soup. Cut the lemongrass in half lengthwise and give it a firm squeeze. Peel and finely chop the ginger and garlic. Finely chop the chili pepper as well. Add the spices prepared with anise, cinnamon and lemon leaves to the soup and boil for a few minutes. Chop some choi. Place the fat tails in the broth. Bake for about 2-3 minutes. Green leaves and snow peas are added to the soup at the end, they only need to be put in it for a short time.

Cook the rice noodles separately.

serving:

Pull the leaves off the stem of the herb. Drizzle the soup with fish sauce, soy sauce and a little lemon juice and add some cooked chicken. Finally, add a few drops of sesame oil. Roll the noodles into pieces and place them in the soup bowl. Add the soup with the toppings and garnish each with a handful of herbs.

Tip:

The basic spices for the soup are lemon grass (replaces lemon juice and zest), soy sauce, fish sauce, garlic, ginger and fresh coriander. This gives the soup a typical Asian flavor. Other spices refine the soup, but are not absolutely necessary.
