Simple, tasty and beautiful to look at: try our chicken fricassee topped with puff pastry!

You’ve probably never eaten frikasee like this before. Our Sulfur Paste Chicken Fricassee not only tastes good but also looks really delicious. Learn how here.

Ingredients for 4 servings:

  • 4 large chicken breasts
  • salt and pepper
  • 2 bay leaves
  • 8 peppercorns
  • 300 grams of carrots
  • 250 g of white asparagus
  • 250 g of green asparagus
  • 60 grams of butter
  • 60 grams of flour
  • 200 grams of whipped cream
  • 1 pastry roll (275g; from the freezer section)
  • 1 egg yolk

Approximately per serving:

  • 680 calories
  • 44 grams of fat
  • 29 grams of carbohydrates
  • 39 grams of protein

Preparation time:

  • approximately 75 minutes (plus 15 minutes baking time)

And this is how it is done:

  1. The first step is to dry your feet. Cook in boiling salted water with bay leaves and peppercorns for about 40 minutes.
  2. Peel the carrots, wash and cut into ½ cm cubes. Wash all the asparagus, peel the whole white and only the bottom third of the green, cut off the woody ends. Cut the asparagus spears into slices, except for the tips.
  3. Take out the sticks and let them cool slightly. Pour the liquid into a strainer and measure out about 700ml per fricassee. Remove the skin and bones from the thighs and cut into bite-sized pieces.
  4. Heat the butter in a saucepan. Lightly sift the flour into it. Stir in the measured stock and cream and bring to a boil. Cook the whole carrots and asparagus in it for about five minutes. Add the meat and heat through. Season the fricassee with salt and pepper and place it in a round pan (about 26 cm ø). Preheat the oven to 220 degrees fan.
  5. Unfold the puff pastry and make a decorative cut in the middle. Place the dough on the form. Gather the excess dough from the inside to the edge of the pan. Whisk together the egg yolk and 1 tablespoon of water. Spread over the dough. Bake in the preheated oven for about 15 minutes until golden brown. Garnish with chervil.

You can garnish our chicken fricassee with herb noodles to your liking. We recommend mushrooms to enhance the taste of other ingredients. Enjoy your meal!
