Low carb luxury Baked chicken with cherry tomatoes
Is there anything more pleasant than the delicious aroma of dishes from the oven? With our delicious stewed cherry tomato chicken and some salad, the taste of summer is perfect!
Ingredients for 4 servings:
4 chicken breast fillets
2 packages of bacon for breakfast
2 red onions
1 tablespoon jalapeños
300 grams of cheese
1 tablespoon of oregano
2 packs of cherry tomatoes
2 cloves of garlic
1 pinch of sugar
1 package of arugula or baby spinach
a little olive oil
Approximately per serving:
24 grams of fat
4 grams of carbohydrates
51 g of protein
And this is how it is done:
Rinse the chicken, pat it dry and make about 6 deep cuts, but don’t cut it. Season with plenty of salt and pepper.
Peel both onions and cut into strips. Stuff the folded bacon, jalapeños and about half of the sliced onions. Grate the lemon zest all over the chicken breasts. Sprinkle with cheese and garnish with oregano. Heat the oven to 200 degrees (convection).
Leave the cherry tomatoes on the stems and wash them. Peel the garlic cloves and roughly chop. Then marinate the cherry tomatoes, the other half of the onion strips and the garlic in a bowl with a little olive oil, salt, pepper and sugar.
Arrange the chicken breasts and cherry tomatoes on two baking sheets and bake in the oven for about 15 to 20 minutes.
Arrange the chicken on a plate with some salad. Season the salad with salt, pepper, olive oil and lemon juice.
