Poultry, fish and lots of fresh vegetables: TV chef Tarik Rose and food doctor Matthias Riedl offer variety when grilling with tasty and healthy recipes.

Grilled salmon with gourmet potential

It starts with a cleverly seasoned salmon fillet. For the preparation, first a so-called rubbing is done. This is a delicious mixture of spices that, unlike classic marinades, does not require oil or other liquids. This means that during grilling, no fat can drip onto the coals and produce carcinogenic substances.

Dry marinade is based on various spices, fresh herbs and fried onions. Rub this generously onto the salmon and grill over a gentle heat. A delicious fish dish with gourmet potential, and salmon with a high content of healthy omega-3 fatty acids. There is no grilling without delicious side dishes: a tomato and spinach salad is served with the fish.

Vegetarian: celery steaks with apples

Most people only know celery as a soup ingredient or chopped raw in a salad. Its spicy flavor is also ideal for a healthy grilled meal. For this purpose, the tuber, rich in vitamins and minerals, is cut into thick slices by nutrition experts and marinated in a marinade of olive oil and herbs. Then the vegetable slices go on the grill. After just a few minutes, the celery is cooked and juicy on the inside and crispy on the outside. Celery steaks are served with hazelnut sauce and grilled apple wedges.

Grilled Chicken with Caesar Salad

Meat lovers will also get their money’s worth in the Iss Better! kitchen, with grilled chicken. Unlike sausages or pork chops, poultry tends to be low in fat and easy to digest. In addition, it is rich in protein and provides a lot of energy. To cook the chicken evenly, remove the bones and cut off the legs. The meat is then spread out and seasoned with herbs, garlic and lemon. The cooking method has several advantages: the spices are absorbed better, the cooking time is reduced to about 15 minutes, and the chicken meat is easier to eat. There is also a fresh Caesar salad with parmesan dressing. Incidentally, spicy salad dressing also goes perfectly as a dip with grilled chicken.
