Prepare meatballs with beans
Ingredients for 4 servings:
For the meatballs:
400g cans of red beans, drained and rinsed
50 g of fresh white bread crumbs
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon fine sea salt
1 large egg yolk
generous pinch of cayenne pepper
1-2 tablespoons extra virgin olive oil
freshly ground black pepper
For the sauce:
400 g cans of chopped tomatoes
½ teaspoon hot smoked paprika
½ teaspoon powdered sugar
2 tablespoons of extra virgin olive oil
2 heaping tablespoons basil, plus extra for garnish (or other herbs you have)
- In a food processor, blend the beans with the breadcrumbs, garlic and onion powder, salt, egg yolk, and cayenne pepper until combined. It should not be too smooth, as the balls need a certain texture. Form the mixture into 12 small balls.
- Heat 1 tablespoon of the oil in a large nonstick skillet and fry the meatballs over medium heat, turning regularly, until lightly browned and heated through, 5-6 minutes. Add a little more oil if needed.
- Meanwhile, for the sauce, place the tomatoes, peppers, sugar and olive oil in a medium saucepan and bring to a simmer. Cook, stirring regularly, until slightly thickened, 2 to 3 minutes. Season with salt and pepper and mix in the chopped basil.
- Add the meatballs to the sauce and cook, stirring, for another 1-2 minutes. Add a splash of water if necessary to loosen the sauce. Garnish with additional herbs and serve with crusty bread.
