Spinach and Ricotta Orzo Pasta: Just enjoy

The other day I was having a conversation where orzo pasta was called overrated. “What should it be? Should it be pasta or rice?” Well, orzo is orzo. That’s exactly the beauty of it: the texture of rice with just the taste of a noodle. I personally think it’s pretty awesome. That’s why today another wonderful recipe with the small type of pasta: Orzo pasta with spinach and ricotta!

This dish is a real comfort food and perfect when the day has been long and exhausting. This is ensured by the soft spinach and creamy ricotta – a combination that still goes together like a pot lid. Other dishes also prove that this duo is simply unbeatable. I mean pappardelle with spinach and ricotta. Isn’t that enough? Then stuffed cannelloni are the best thing for you. However, spinach and ricotta gnocchi can also be seen and enjoyed – preferably with a creamy sauce. Speaking of cream: With our orzo pasta, cream or milk has no place. This is provided by the parmesan and ricotta as well as the pasta water, which binds the sauce nicely. Note: Never discard the pasta water completely!

the preparation

  1. Cook orzo pasta according to package directions. Sort the spinach, wash and dry.

  2. Peel and finely chop the onion and garlic. Heat a pan and sauté the onion for about 3 minutes until it softens. Add the garlic and onions. Fry for another 3 minutes.

  3. Add the spinach and cook for 5 minutes on medium heat. When the pasta is ready, drain it, reserving 60 ml of the pasta water. Add the pasta and pasta water and 2 tablespoons olive oil to the pan.

  4. Now stir in the parmesan and some crumbled ricotta cheese. Adjust according to taste with colored salt and pepper. Finished!
