Chicken from Guatemala! Today it’s getting cheeky: Guatemalan-style “Jocon” chicken

Our last chicken dish is absolutely amazing. Even cooking is already an adventure and the taste will leave you in the eye. A dish like a holiday trip. The color shows why it is called “green chicken” in Spanish.
Chicken thighs in sauce are now available in all possible variants. But our Guatemalan style chicken “Jocon” is truly exotic.
Ingredients for 6-8 servings:
30 g of roasted pumpkin seeds
15 g toasted sesame
2 kg skinless chicken thighs
750 g of tomatoes (fresh or canned)
1 bunch of coriander
3 tablespoons of olive oil
4 cloves of garlic
3 jalapenos
2 green peppers
1 vegetable onion
salt and pepper
As decoration
Tortillas or wraps (ready-made)
Spring onion to taste
1 avocado
2 limes per serving about:

32 grams of carbohydrates
63.4 grams of protein
And this is how it is done:
Roast both kernel varieties together in a hot pan for about two minutes and set aside. After cooling, grind finely in a blender.
Simply cover the chicken breasts with salted water and simmer over low heat for about 30 minutes. If using fresh tomatoes, add them too. Remove the chicken thighs from the pot with a slotted spoon and set aside. Now put the tomatoes in the blender.
Reserve four cups of broth. Discard or freeze the rest. Pour the chopped tomatoes into the pot. Now puree one cup of broth along with coriander and add the mixture to the tomatoes.
Now we cut the vegetables, garlic and jalapenos and sauté them in olive oil. Then puree with a cup of broth in a blender and pour into a pot.
Now add the ground seeds in the pot to the mixture. So do the remaining cups of gravy. Bring everything to a wave. Lower the heat and simmer for 10-15 minutes. Meanwhile, peel the meat from the thighs, cut it into small pieces and add it to the pot with salt and pepper. Boil everything together for another ten minutes.
Meanwhile, cut the garnish as desired and place a corn tortilla or wrap per person on a deep dish. Place the finished stew on top, serve with the garnish and a lime wedge.

This recipe is worth every effort and will convince you that you have not cooked it for the last time. By the way, the preparation sounds more complicated than it is. When it comes to cooking, everything is very easy to do. And you can rarely go wrong with chicken.
