Fresh, colorful, healthy: spring salad with lemon vinaigrette

Isn’t that a beautiful sight? Fresh salads and herbs are combined in one dish. Fresh Spring Salad with Lemon Vinaigrette not only looks good, but it’s healthy too.

Try this delicious spring salad with lemon vinaigrette that will fill you up. And anyone who now thinks of a complicated creation is wrong. Because the preparation is very simple.

Ingredients for 4 people:

  • 500 g of mixed salads, e.g. romaine lettuce, baby spinach, radicchio, rocket
  • 1 onion
  • 2 tablespoons of herbs, e.g. chives, parsley, tarragon, mushrooms
  • 2 tablespoons of lemon juice
  • 1 pinch of salt
  • 1 tablespoon Dijon mustard
  • 1 pinch of ground black pepper
  • 5 tablespoons of olive oil

Approximately per serving:

  • 215 calories
  • 20 grams of fat
  • 3 grams of carbohydrates
  • 2 grams of protein

And this is how it is done:


  1. Sort the lettuce, wash, dry and cut the leaves into bite-sized pieces. Place them in a decorative bowl.
  2. Select the herbs, wash, dry and finely chop.
  3. Peel the onion and cut into thin slices.
  4. Mix the lemon juice with the salt in a bowl until the salt crystals have dissolved. Stir in mustard and freshly ground black pepper.
  5. Mix the olive oil vigorously, until the oil and lemon juice have become a homogeneous mixture. Fold in the shallots and herbs and use immediately. Otherwise the oil and lemon juice will separate again.
  6. Pour the dressing over the salad and toss gently.


Tip: Sunflower seeds and roasted pumpkin seeds give the salad a nutty flavor. If you have them in stock, place them in the salad bowl.


The simple recipe for a beautiful spring salad with lemon vinaigrette has been passed down through the generations in my family. It changes all the time, but basically remains the same. If you want, you can add a boiled egg, fresh berries or smoked salmon to the fresh salad – but you don’t have to. Spring Salad with Lemon Vinaigrette tastes just as perfect on its own or modified.
