Ingredients for 4 servings:

  • 200 g jacket potatoes (cooked, from the day before)
  • 1 small onion
  • 1 spoon of oil
  • 50 ml of vegetable broth
  • ground cumin
  • Salt pepper
  • 1/2 red bell pepper
  • 140 g of corn (can)
  • 1 tablespoon of lemon juice
  • 1 handful of coriander

Approximately per serving:

  • 320 calories
  • 8 grams of fat
  • 52 grams of carbohydrates
  • 9 grams of protein

Preparation time:

  • 20 minutes (plus cooking time for potatoes)

And this is how it is done:


  1. Peel and slice the boiled potatoes as desired and place in a bowl. Wash and cut the fresh onion and cut into small circles.
  2. Heat the oil in a pot and sauté the spring onions until translucent. Cover with vegetable stock, bring to a boil and season with cumin, salt and pepper. Pour over the potatoes while they are still hot, let them cool and fill.
  3. Meanwhile, wash, clean and finely chop the bell peppers. Drain the corn and mix both with the warm potatoes. Squeeze the lemon and mix the juice into the potatoes. Wash the coriander, drain and finely chop. Serve sprinkled with potato salad.
