The New Food Trend: One-Tray Recipe for Shredded Chicken with Lots of Veggies!

Ever heard of one tray recipes? These are dishes in which all the ingredients are baked directly in the same pan. It sounds practical and it’s really delicious!

Ingredients for 4 servings:

  • 500 grams of potatoes
  • 2 onions, red
  • 3 red peppers
  • 400 grams of tomatoes
  • 4 chicken breast fillets
  • 6 cloves of garlic
  • 1 spoon of salt
  • 1 spoon of pepper
  • 2 tablespoons of garlic powder
  • 2 tablespoons paprika powder, sweet
  • 4 tablespoons of olive oil
  • 200 g of grated cheese
  • To serve:
  • basil, fresh
  • Fennel, fresh and chopped
  • chickpeas, chopped
  • lemon juice

Approximately per serving:

  • 737 calories
  • 30 grams of fat
  • 43 grams of carbohydrates
  • 70 grams of protein

Preparation time:

  • approximately 20 minutes (plus 35 minutes of baking time)

And this is how it is done:

  1. First, preheat the oven to 200 degrees (top/bottom heat). Peel the potatoes and pre-bake them on a baking sheet lined with baking paper for 15 minutes.
  2. Meanwhile, peel and slice the onions. Wash the peppers, remove the core and cut into strips. Wash and quarter or quarter the tomatoes.
  3. Wash and drain the meat. If you want, you can cut the fillets into smaller pieces, but they can also be prepared whole.
  4. Now take the pan with the potatoes out of the oven, add the vegetables, the meat and the garlic – with the skin – as well as the spices and the olive oil and mix everything well. Then bake in the oven for another 35 minutes or until the meat is done. After 15 minutes in the oven, sprinkle the cheese over the ingredients on the baking sheet.
  5. To serve, arrange the chicken on plates with vegetables, sprinkle with herbs and drizzle with lemon juice.
