  • and from the basic supply of olive oil, honey and salt to taste

The preparation is also very simple: cut the watermelon into bite-sized pieces or slices and place on a plate, then crumble over the slice, wash the mint and remove the leaves, then add those too. Also vegetable stock, a good mustard, soy sauce, some onion and garlic. “I would always have with me pasta, rice, other “grains” such as couscous, bulgur, millet or quinoa and potatoes,” says Anne-Katrin Weber. “All this is ideal for uncomplicated and quick cooking.”

Pesto pasta salad tastes great during the holidays

Cookbook author Steffi Sinzenich also knows what works in vacation homes and what everyone likes. In the book “The Simplest Family Recipes of All Time” she presents a pesto-noodle salad: For this cook 500 grams of pasta, halve 250 grams of tomatoes, cut a package of mozzarella, wash two handfuls of rocket and finally. mix everything with green pesto – so it can be served.

Once purchased, green pesto can be used directly in the holiday home kitchen: “It’s great as a marinade for chicken breast fillets or grilled vegetables,” says Steffi Sinzenich. “Alternatively, green pesto is great for salad dressings. Another quick idea from her book: pasta with peppers and walnuts. For this dish, boil 500 grams of pasta and drain the boiling water. Grilled peppers from the jar are cut into strips and lightly fried in oil, then mixed with noodles with previously roasted walnuts and a little cooking water. Season everything with salt and pepper – and the 20-minute dish is ready.

“Instead of grilled peppers, you can also use sun-dried tomatoes from a jar. You can actually buy them at any supermarket,” says Steffi Sinzenich. For vacations at the vacation home, she only took non-perishable food items with her. “Everything else can be bought locally.”
