A watermelon and feta salad, which Anne-Katrin Weber shows in her book The Five-Ingredient Vegetarian Kitchen*, tastes especially good at high temperatures.

Gnocchi with cherry tomatoes and caper butter

If you want a warm snack, you can count on gnocchi with cherry tomatoes and caper butter, which can also be found in Anne-Katrin Weber’s book. “You can get gnocchi in good quality in the refrigerated section, small tomatoes are part of the fast kitchen, together with spicy capers and basil with summer herbs put us in a light Mediterranean holiday mood,” says the expert .

Ingredients:

  • 800 g of gnocchi
  • 750 g cocktail tomatoes
  • 100 grams of butter
  • 2 tablespoons of capers
  • ½ bunch of basil

Cook the gnocchi according to package directions. Cook the diced tomatoes in a pan with garlic and olive oil until the tomatoes break down. Then mix the capers and 2 tablespoons of the caper juice with the butter in the sauce. At the end, fold the gnocchi and decorate with basil.

Another quick idea from her book: pasta with peppers and walnuts. For this dish, boil 500 grams of pasta and drain the boiling water. Grilled peppers from the jar are cut into strips and lightly fried in oil, then mixed with noodles with previously roasted walnuts and a little cooking water. Season everything with salt and pepper – and the 20-minute dish is ready.

“Instead of grilled peppers, you can also use sun-dried tomatoes from a jar. You can actually buy them at any supermarket,” says Steffi Sinzenich. For vacations at the vacation home, she only took non-perishable food items with her. “Everything else can be bought locally.”
